Wine Chianti Governo
Cecchi has decided to produce our Chianti Governo, to recall an ancient method of production dating from the late eighteenth and early nineteenth centuries. The resulting wine is actually produced from two different vineyard selections. The first is fermented to produce a fruity wine, to which the must is added for a second, and a selection of more mature vineyards. The resulting mixture is then fermented at strictly controlled temperatures to produce a wine that is richer and a little higher in residual sugar, with a soft sensation in the mouth.
